Install the dlc. Complete the tutorial/prologue and wake as Henry in Rataje mill. At this point you can use the dlc content. Talk to Teresa about the dog, and accept ownership of it, and interact with it. You now have a dog. Talk to Teresa about 'what happened in Skalitz' to enter her content from the dlc, you will repeat the prologue content
A 1070 has more than enough VRAM. I've got a 1060 (6GB) and can handle Rattay ~40 fps with the HD textures. I actually got a frame rate increase with the 1.4 patch, others weren't so lucky even with better hardware. Thanks for the info. it is much appreciated. #15.

After this quest you won’t be so pushed to continue in the main line, and also you will have a horse. I suggest building the Tavern or the Forge to start with as either one of those will bring in 500G to start with. The Tavern will earn you more in the end with all the improvements to it. Once you have everything built (besides the Rathaus and the Church), along with all the improvements, you should be bringing in more than 2,000G a day.

Capon DLC after Epilogue. So I started the "The Amorous Adventures of Bold Sir Hans Capon" DLC after finishing the game and riding with him to the edge of the map in the Epilogue quest. He tells me to go get a necklace so i do, but when i return with it "give the necklace back to sir hans" I cant seem to find him anywhere.

You can complete the entire game at level 1, or you can farm the skills to level 20 before starting the first real mission. It don't really matter in that sense. You can run into a Cuman at level 1 and at lvl 20, and they will have the same stuff and fight the same way (the higher your level the slower they apparently are in a fight tho).
